Step-by-Step Instructions
Step- 1 Prepare the Batter

- Add 1 cup semolina in a mixing bowl.
- Add 1/2 cup plain curd and 1 tsp salt. Mix well.
- Gradually add 3/4 cup water while mixing.
- Cover and let it rest for 15–30 minutes for slight fermentation.
Tip: You may add half water now and remaining after fermentation.
Step- 2 Prepare the Steamer

- Grease the idli tray with oil to prevent sticking.
- Boil water in idli maker.
- Optionally, add lemon slice.
Step- 3 Add Eno & Fill Moulds

- Mix fermented batter gently.
- Add 1 tsp Eno and mix lightly.
- Fill each idli mould halfway (idlis double in size).
This quantity makes approx. 12 idlis.
Step- 4 Steam the Idlis

- Place trays in boiling water and cover.
- Steam on medium flame for 15–20 minutes.
- Check with toothpick/knife – should come out dry.
- Let cool slightly before unmoulding to prevent breakage.
Step- 5 Serve

- Coconut chutney
- Green chutney
- Sambar
