Step-by-Step Instructions

Step- 1 Prepare the Batter

  • Add 1 cup semolina in a mixing bowl.
  • Add 1/2 cup plain curd and 1 tsp salt. Mix well.
  • Gradually add 3/4 cup water while mixing.
  • Cover and let it rest for 15–30 minutes for slight fermentation.

Tip: You may add half water now and remaining after fermentation.

Step- 2 Prepare the Steamer

  • Grease the idli tray with oil to prevent sticking.
  • Boil water in idli maker.
  • Optionally, add lemon slice.

Step- 3 Add Eno & Fill Moulds

  • Add 1 tsp Eno and mix lightly.
  • Fill each idli mould halfway (idlis double in size).

This quantity makes approx. 12 idlis.

Step- 4 Steam the Idlis

  • Steam on medium flame for 15–20 minutes.
  • Check with toothpick/knife – should come out dry.
  • Let cool slightly before unmoulding to prevent breakage.
